Though it may be traditional to eat fried foods during Channukah, after the first couple nights, the usual potato pancakes can get pretty tired. Try this fun alternative instead. Peel and core 4 Granny Smith apples. Slice crosswise into ¼ inch thick rounds. Next, whip up a batch of your favorite pancake batter. (A mix is fine). Then dip each round, a few at a time, into the batter. Heat a half-inch of vegetable or canola oil in a large skillet over medium high heat, until shimmering. Drop in the batter-coated apples, being careful not to overcrowd, and fry, turning once until golden-brown on each side. Remove to layers of paper towel to drain. Then place in a 200 degree oven to keep warm while you fry the rest. Sprinkle with powdered sugar and serve. Makes 18-24 “donuts.”
