Tip of the Week

Mexican Quiche

10 eggs, beaten
1/2 cup flour
1 Tbsp baking powder
dash of salt
2 (4 ounce) cans diced green chilies
1 pint cottage cheese
4 cups shredded Monterey Jack or cheddar cheese
1/2 cup melted butter

Preheat oven to 400 degrees F.

Grease a 9x13" glass baking pan. In a large bowl mix together ingredients in the order given. Pour into the prepared dish. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and continue baking for 20 minutes or until a knife inserted in the center comes out clean. Serve with Salsa, if desired.
