Making Sun Dried Tomatoes

1) Select firm, red and ripe plum tomatoes.

2) Cut each tomato in half and squeeze out excess moisture; scoop out seeds and remove stem. Place on screens cut side up; lightly salt.

3) Place outside in the sun, cover with cheese cloth to repel insects. Allow a few days for complete drying, bringing the trays in at night.

4) If you`d like, store some in the pantry, and rehydrate some by covering with a mixture of half boiling water/half vinegar for a few minutes. Drain, then cover with olive oil and herbs of your choice. Store like this in the refrigerator for at least 24 hours before using.
