Perfect for the holiday season, this pumpkin cake recipe requires minimal preparation time because it is not from scratch (though it tastes 100% homemade). Simply add one standard-size can of baking pumpkin (any brand) to one box of cake mix (any brand, any variety). Stir pumpkin and cake mix together until well blended and bake to the instructions on the cake mix box. Depending on your oven, pan and altitude, the pumpkin cake usually requires the longer time suggestion from the box. If you are at a high altitude or baking in a deeper pan, you might consider baking for a few minutes longer than the box suggests. Before removing from the oven, test your cake with a toothpick to make sure it is done. Stick the toothpick into the center of the cake. If it comes out clean, you will know the cake is done.

Though spice cake traditionally pairs with pumpkin, other cakes also taste wonderful baked this way. Try devil's food or vanilla for some variety. Using pumpkin, your box cake or cupcakes will come out of the oven and stay moist for days. This is one recipe you will love to pass on!
