Pumpkin seeds are a delicious snack that also happen to be good for you. My daughter and I look forward to baking our pumpkin seeds just as much as we do carving the pumpkin. As you are carving pumpkins this October, set your seeds aside. When you are ready, wash them off in a strainer to remove any pieces of pumpkin. Spray a baking sheet with olive oil cooking spray and then lay your seeds out single file. I don't dry my seeds off, although some people do. I sprinkle my pumpkin seeds with salt, and the water keeps the salt on the seed. Turn your oven to 325 degrees F. and cook your seeds for 15-20 minutes. Let them cool and then place them in individual snack bags. Your children can grab them when watching a movie, or packing a school lunch.
