November 6, 2009, Newsletter Issue #438: Instant Cocoa for Diabetics

Tip of the Week

I became interested in diabetic cooking because my grandfather is a long time sufferer of the disease. Today, I got to thinking about hot chocolate because the temperatures have dropped significantly in my area. Found myself wanting to wear two sweaters and it isn't even winter yet! Hot chocolate is always the first drink we consider making on a cold day. I wanted my grandfather to be able to have a cup as well. Here is a recipe you can use to make some hot chocolate for your relative with diabetes:

1 cup of nonfat dry milk

1/4 cup of unsweetened cocoa powder

1 1/2 tsp. of Equal

1/4 cup of lowfat powdered creamer

Mixing bowl

Mix all of the ingredients together. Separate in to three equal parts and pour in to baggies. Each of the three baggies can be mixed with one cup of boiling water to make a delicious instant cup of hot chocolate.
