One issue I often deal with is trying to shed my reliance on processed vegan food. There are some great products out there that are loads healthier than traditional processed food and they are great for fooling your omnivorous friends. But, when it comes to pasta dishes, finding a tasty and satisfying alternative to Parmesan cheese is both expensive and lacking in taste. I use this little trick to top my pasta dishes.
Take some bread and cut it into cubes as if you were making croutons. In a frying pan over medium heat, toss the bread cubes with any kind of fat (like olive oil or Earth Balance), some salt, and herbs of your choice. Let them brown up nicely and then set them aside to cool. In a food processor, whiz up the cooled croutons with some nutritional yeast and throw on your favorite pasta. You can also toss in a few nuts like cashews or almonds. Experiment with the quantities to make it perfect for your tastes.
