Tip of the Week

Cowboy Beans

2 cups dried pinto beans
1 cup diced bacon
1 onion, chopped
2 cloves garlic, minced
2 Tbsp chili powder
1 tsp ground cumin
1 tsp salt
1 fresh tomato, chopped
12 ounce can of beer
1 (4 ounce) can chopped green chiles, drained
2 jalapeno peppers, stemmed, seeded and chopped

Wash beans well. In the crockpot, combine beans, beer, and enough water to cover beans by 2 inches. Soak overnight. Do not drain.

Partially fry bacon. Add to beans and liquid in crockpot. Add more water if necessary. Add rest of ingredients except salt and cook about 4 hours on high or until beans are tender. Add salt just before serving, and stir well.
