Leftover Turkey on Toast

Wondering what you can do differently with your leftover turkey? Here is a wonderful idea for a cream sauce that you can utilize to make some creamed turkey over toast.

Begin by melting half a stick of butter in a saucepan. Add 3 Tbsp. of flour and stir. Keep stirring while you slowly pour in 2 cups of milk. Once the sauce starts to thicken up, add 4 oz. of shredded cheddar cheese. Continue stiring until the cheese has been melted in to the cream sauce. Now you can add your leftover turkey. Just pull the turkey apart in to strips or smaller pieces and throw in to the saucepan. Take the cream sauce off of the heat and let the turkey warm up while you make your toast. Lay the toast on a plate and cover with some of cream sauce that now contains your leftover turkey. Sprinkle on a dash of salt and pepper and enjoy.

   

Pepperoni Pizza Rolls

Pepperoni pizza rolls can be made in a matter of minutes and then cooked in the microwave in just 60 seconds. So if you only have half an hour for lunch, this tip will get you well fed and on your way to your next appointment.

Lay out one flour tortilla for each individual. Spread a layer of spaghetti sauce on top. Sprinkle a little Parmesan cheese over the pasta sauce. Grate some mozzerella cheese and add it to the tortilla. Finish with a few thinly sliced pepperoni pieces. Roll up the tortilla and place in a microwave safe bowl. Cook in the microwave on high for 60 seconds. Cook each pepperoni pizza roll by itself. When you remove the pepperoni pizza roll, you can cut it in half or in quarters.

   

Tuna Pasta Salad

There is no rule that says you have to eat your tuna on a piece of bread for lunch. You can change it up a bit and make a delicious tuna pasta salad. First, you need to drain a 4 oz. can of tuna fish. Place it in a bowl and add 2 Tbsp. of mayo. Sprinkle on a few dashes of pepper, mix it up, and set it aside. Second, boil a pot of water and then add 8 oz. of pasta. Cook the pasta for 15 minutes or until soft. Drain the water from the pot. Third, you need to mix the pasta and the tuna together. To finish your dish you must lay a few large lettuce leaves on your plate. Top with the tuna pasta salad. You will have extra tuna pasta salad to save for another day or to share with a friend.

When you pack your lunch, you should consider using a sports bottle. You or your child can refill the sports bottle throughout the day so that you always have something to drink. If you pack a soda or a juice box, you will only drink during lunch because you will throw the empty container away.
